Recipes - Fajitas

1 lb.
beef top round steak, cut 1/2 inch thick
Juice of 1 to 2 limes (1/3 cup juice)
1 to 1 1/2 tsp.
garlic salt
1/2 tsp.
pepper
4
flour tortillas, warmed (6 inch diameter)
1 cup each
shredded lettuce and chopped tomato
1/4 cup each
liced green onions and shredded low fat cheeses


Trim excess fat from steak.  Pound steak to 1/4 inch thickness.   Place steak in plastic bag: sprinkle both sides of steak with lime juice, garlic salt and pepper.  Tie bag securely and marinate in refrigerator 6 to 8 hours.   Drain marinade; discard.  Broil steak over medium-hot coals  *2 to 3 minutes on each side.  Carve crossgrain into thin slices.  To serve, place an equal amount of lettuce, tomato, beef strips, onions and cheese on each tortilla.   Yield:  4 servings.

*Steak may also be pan-broiled in heavy, non-stick frying pan over medium-high heat 5 to 7 minutes, turning occasionally.
